Spicy Chicken and Veggie Salad
This is my go to salad when I am looking for a fast, healthful meal. I have been making a point to eat more raw veggies, and try to get in at least one salad in every day. As much as I like salad, let's face it.... sometimes it can get a little boring. Fear not dear reader, because this recipe delivers a spicy, crunchy, sweet salad that will treat your taste buds. For me, it makes a great post workout lunch. One trick to making this salad a snap is to have chicken already cooked and ready to go. It makes a great way to use leftover chicken. Don't have any chicken? No sweat. You can substitute diced pork, leftover steak or even canned tuna. Vegetarians can't go wrong with Tofu or Tempeh, or you can eat it a la' Vegan if that's your thing. This salad is very versatile as well as tasty.
Spicy Chicken and Veggie Salad
serves 2
In a mixing bowl, toss together:
2 Tbs San-J Szechuan marinade (gluten free!)
1 tsp Bragg Sea Kelp Delight
1/2 tsp 5 Spice Powder
8 ounces cooked chicken, chopped
4 cups Trader Joe's Healthy 8 Veggi Mix
1 or 2 Mandarine Oranges
Serve and add a light sprinkle of S&B Nanami Togarashi or Cayenne Pepper (optional)
Chef's Notes:
I purchased the Healthy 8 Veggie salad mix at Trader Joe's but there are other veggie mixes out there at your local supermarket. The Bragg Sea Kelp sprinkles and Szechuan sauce are available at Whole Foods Market or you can purchase them online. The S&B Chili Pepper is available at most Asian markets. For a little extra crunch, I like to throw in 2 tablespoons raw pumpkin seeds. Slivered Almonds rock this salad, too.
I've thrown in diced pears instead of Mandarine Oranges. And sometimes I'll get wild and mix in Curry powder and make it Indian instead of Szechuan. Go crazy and have fun. This one is hard to mess up.
