Bison Stew
I want to share one of my family’s favourite stew recipes with you. I’ve been making beef stew for a few years now, but since going paleo, I’ve adapted the recipe to make it wheat-free and paleo-friendly.
Bison Stew Recipe
Serves 4
Prep Time: 20 min
Cooking Time: 2 hours
Ingredients
2.5 lb. bison meat, cut into 1-inch cubes;
2 onions, minced;
2 medium carrots, peeled, chunked;
1 medium Sweet Potato, peeled, chunked;
1 can of diced tomatoes (or 2 cups fresh)
3 celery stalks, minced (optional)
1/5 cup frozen green peas (optional)
1 cup of dry red wine; (optional)
3 cup organic beef broth
1 tsp. ground allspice;
3 garlic cloves, minced;
2 tbsp. tomato paste;
2 tbs Arrow Root Powder or Tapioca Starch
1/2 tsp Thyme, chopped
1 teaspoon fresh rosemary, chopped
Sea salt and freshly ground black pepper;
Preparation

2 tbsp. tomato paste;

Sea salt and freshly ground black pepper;
Preparation
In a large stew pot, heat oil over medium heat. Once shimmering, add diced onion and saute until translucent.
Add beef and saute until lightly browned.
Add the thyme and red wine, and cook until the liquid is reduced by about half.
Add beef broth, mix well, and cover. Simmer on low for 30 minutes.
Add sweet potato, carrots, celery and peas. Cover and simmer another 30 minutes.
In a small bowl, mix arrowroot starch with cold water until dissolved. Add starch slurry to stew while stirring.
Add tomatoes, cover, and simmer 10 minutes more or until done.
Serve Hot!
Chef's Notes:
Bison Stew is such an amazing comfort food. Perfect on a cold winter night. And I love how versitile it is. Sometimes I'll add celery. Other times I throw in some peas for color. The Red whine adds a bit of character to the stew but it is not a deal breaker if you omit it. Just for fun, throw in Yams. One time I was out of carrots. So I tossed in a garnet Yam and it was still delicious.
